Recipe #2 Roasted Pork Breakfast Tacos

I used the leftovers from my Slow Roasted Pork Street Tacos for this recipe. .

Ingredients:
  • Leftover Pork Taco Meet
  • Fresh flour tortillas
  • Shreaded Mexican blend cheese
  • scrambled eggs
  • salsa
Steps:
  • Heat leftover pork taco meet on the griddle until it starts to sear.
  • scramble eggs.
  • I use the fresh, raw flour tortillas so they need to be cooked on the griddle.
  • I topped with a sweet ghost pepper hot sauce from Buc-ee’s
On The Plate:
  • Put your shreaded cheese, then pork and scrambled egg on top of the fresh tortilla and top with salsa of choice.
Final Thoughts:

I served this up to the dads and kids during the youth hunt weekend and these might have been better than the tacos we had for dinner. The Buc-ee’s ghost pepper hot sauce really set these off.
